If you mean, "video capture directly from the video output of the machine", then the problem is that you need both a specific Atari mono to VGA cable, and then you have to use a decent flicker fixer because all the demo is using double buffered pictures with alternate dithering to simulate gray colors on the monochrome screen (both for images and the raster bars effect).

On the Atari SM124 that works very nicely, without flicker fixer on a PC screen it looks like a psychedelic epileptic slideshow - and unfortunately I do not have that type of equipment :-/

None of the available emulators are correctly emulating the monochrome mode.

The basic emulation works, but as soon as you do effects that are cycle accurate or you try to play with the STe additional registers or change the value of the color registers then the entire display is fubar :)

On the Atari forums, the maintainer of Steem wrote:

"Future version of Steem will support this demo.
I was looking for programs using HSCROLL in high res."


So there you go, I broke the emulators.

I originally made a youtube video capture from the real screen on the real hardware:

Then it was replaced by an emulator capture, made with Hatari which unfortunately does not support color changes in Monochrome, so there are issues (like the raster bars are on white background instead of black, most of the gray scale tricks are gone, and the big vertical scroller is missing):

So I made a new one, still on emulator, but using Steem SSE instead of Hatari, it's still not as nice as what you can see on the real machine, but at least all the effects are present, so if all you saw was the Hatari version, please check that one instead:
