Probably many reasons:
"Typical" demoscene music is electronic, maybe due to the fact that anything else was impossible in the beginning.

Rock/Metal is much harder to produce. It actually takes some effort to get certain licks/rythms super tight. When you make electronic music with good samples, you can be 100% certain that the sound quality is always "perfect", and you can do loads of changes to the music in *realtime*, instead of having to build a homestudio and record takes (which is expensive). Guitars (especially singlecoils) and their periphals are pretty noisy (unless it's my super-shielded yellow banana guitar!), which also leads to diminished sound quality.
Also, you would have to learn to actually play (at least) guitar :O

(BTW, if anyone want some licks for a demo, I'm free).
