In no particular order really the ones i liked, all on Amiga unless specified, except the obviously more recent games which aren't available on Amiga :)

Eye of the Beholder 2 was great, me and my brother played that so much.
Oblivion - Ods it's fine just use the patch, oh and of course apply the Unoffical Oblivion Patch to remove the thousands of issues Beth couldn't be arsed to fix :)
Sword of Vermillion(Megadrive) really nice game. I used to borrow my best friends MD to play it, and he'd borrow my Amiga.
Icewind Dale
BattleTech: The Crescent Hawk's Inception - I guess this is an RPG? either way one of the few games i've ever been bothered to finish so many times i've lost count. Such high playability.
Baulders Gate 1 - Never really got into BG2 for some reason. The same with NWNs.
Dungeon Siege 1 & 2 - These count as RPGs?
Nethack/ADOM/Moria etc etc
Hero Quest

And no doubt many more i've forgotten about :)

Most of these i still play either on one of my Amigas or through UAE.

Fallout 1 & 2, Arcanum, Morrowind, Neverwinter Nights 1 + all addons, and there's Temple of Elemental Evil somewhere on hdd... but no time for this for now.

Intrinsic: Dungeon Siege is hack & slash, just like Diablo ;) pretty nice hack & slash, though...

fallout 1
Planescape torment. very underrated imo. a pearl .
baldurs gate 1

So on subject and since noone else has put it out there.

Are bethesda going to be able to pull it off? They are messing with gaming history, imho the crown jewels of RPG's.

I trust that they will. Sure oblivion at times became generic, and the combat and leveling system was well dodgy, but i was convinced. It wasnt just a brilliant RPG it was a brilliant game flat out.

SNES: Chrono Trigger & all the Final Fantasy's
PC: Ultima VII, Betrayal at Krondor
I use a levelling mod for Oblivion which gets around the standard crappy system :)

I suck at completing RPG's, but the ones I've enjoyed the most has been:
* Golden Sun 1 & 2, GBA
* Final Fantasy VII, PS
* Icewind Dale, PC. Very linear compared to Baldur's Gate.

and the no monthly fee thing is bullshit too, all the extra features need subscription.
