Dune <3 as Sapiens's tune. Fitted great with the gameplay.
Also I liked the Amiga version of Deflektor (with the voice d-d-d-d-deflektor! pwe'pwe'pwe'pouet!)
Turrican 2 and battle squadron cames in mind easily ;)

I agree with all those Hippel, Hülsbeck & Gustaffson tunes which have already been mentioned.
Have to add:
Hawkeye (C64) - Maniacs of Noise

Son of a ... I get really angry when people misspell ... it's Gran Turismo 2, you friggin' moron on youtube
Interesting thread.
I'll add G.I. Joe - when losing the game, you get to hear the Cobra endtune, which is awesome.
Best music ever is probably Zoids by Rob Hubbard. There's an orchestral original on which it's based, but Hubbard managed to turn it into something better. (The game however I found impenetrable without manuals and if you just started having English in school.)
I recently found myself playing a game which was current when this thread was on: Sly Cooper on PS2. The awesomeness of all the music in all three parts and numerous levels is hard to explain, but there are a few standouts even among them.
Also good: PS3 Hitman, the "Black Bandana" theme, bestest Danish Western music.
